Cooking Catch-up: Chicken Pot Pie, and Loco Moco

You remember the applesauce yogurt bread I failed with a few weeks ago, right?

I had the bright idea of trying to crumble it up and make a pot pie topping with it, so I dutifully made the filling-- chicken stew in a crockpot, basically, but then I realized the failed applesauce bread was too moist to make a reasonable topping. On top of that, there was, I suspected, mold growing on the bottom of the pie crust I'd been planning to use, so I threw that out... and improvised a biscuit-style pot pie crust. Instead, I used half the (small) loaf of bread as filler to thicken the filling.

Chicken pot pie!

The picture doesn't show it but I over-burned the crust a bit. I should have given it 30 minutes at 350, not 45.

A slice of chicken pot pie...

So how was it? Honestly, weird. The yogurt and cinnamon flavors came out pretty strong in the filling. The biscuit crust was nice, but in the future, I should just use regular bread in the stew if I'm using it as a filler.

I still had a jar of 'chicken pot pie' filling left, so today I added kidney beans, diced tomatoes, chicken-apple sausage, and a lot of chili powder and made it into chili. It works! Tomorrow, to finish off the applesauce bread, I'll try making it into french toast. We'll have to see how that goes!

Loco Moco

I didn't cook this! But I figured some people might be curious what "Loco Moco" looks like, based on my having mentioned it in attempting to make a healthy version. This is the original cholesterol-laden version: two hamburger patties on brown rice (normally white rice, but I asked for the brown rice), drizzled in gravy, with two fried eggs on top. Yum! ^_^

*cheers the experimentation!*

Oh, Loco Moco looks lovely, if only those were veggie burgers and mushroom gravy! [/unapologetic ovolacto vegetarian]

Gives you something to try for the future, IMO. ^_^

It does indeed! ...and possibly to suggest to restaurants. I've found ways to order things that aren't actually on the menu before... *evil grin*

I've got something like that, a local restaurant, Potsticker King, accidentally made 'Gunpowder Prawns' with chicken for a friend and since then (since I like chicken but not shellfish) I try to order Gunpowder Chicken from them. It's like sweet-and-sour chicken but spicy. Yum!

Okay, okay, I suppose you could substitute tofu as well. :)

Eeee, spicy! (Yeah, yeah, for someone who grew up in Texas, surrounded by jalapeƱos, I have virtually no picante-tolerance... O;D )

Wonder what sweet-and-sour veggie-burger'd taste like...

I cannot speak to the veggie-burger, but if you take a regular hamburger patty and put a pineapple sauce on it, served on a bed of rice, it tastes quite good.

That sounds like it would taste rather yummy, really, with a veggie burger...

It's one of my childhood favorite comfort foods!

As I noted in Pineapple Meatloaf (http://tuftears.livejournal.com/86577.html), "Pineapple sauce is easy: get a pot, take the water/juice from the can of pineapple, set it to boiling, mix a heaping tablespoon of cornstarch into a glass with just enough water to liquidify it, then pour that in. Add a bit of crushed red peppers for zing."

In your case, you can skip the crushed red peppers. You can add sugar and a bit of salt to bring out the sweetness.

Hot red peppers or red bell peppers? I like red bell peppers...

...Eeeee, cooking! *beth fears*

The crushed red peppers are the same as you'd get from a pizza place in those little packets.

You can dice red bell peppers and add them instead!

EEK, the HOT red peppers! *flees*

Diced red bells, on the other hand, might add quite a nice tang. Hmmmmm.
