Peach Pancakes
Nov. 21st, 2011 08:15 pmFollowing my attempt of the previous week in making 'breakfast pancakes' with Krusteaz oat bran pancake mix-- picture pancake batter mixed with sausage and mixed veggies-- I figured that the batter seemed too sweet to work with the savory mix... So I mixed most of a bottle of peaches into this batch instead.

One of two pancakes-- the second one didn't come out pretty enough for the picture-- and a chicken-apple sausage and about 1.5 carrots worth of baked carrots. I cut the carrots lengthwise and then into sticks, put them on a baking pan, then drizzled honey and sprinkled cinnamon generously. Next time, I should cook the carrots for longer, I'd suggest 30 minutes at 350 degrees for carrots.
The peach pancakes came out very tasty! However, I'm dissatisfied with my spatulas. I picked up some wooden spatulas to avoid scraping the frying pans (non-stick surfaces) because the nylon ones were peeling, due to not being suited for high temperature, but the spatulas were too thick to slip under the pancakes. I may see if I can get my brother to use his sander to grind the spatulas to a thinner edge. In the meantime, the nylon ones will have to do.
