It was late, I had leftover rice, plus various ingredients, but I didn't want to bust out the wok and cook something, so I improvised...

Start by dicing a chicken-apple sausage (or other sausage). Put it in a middlin'-sized bowl along with a plenitude of frozen mixed veggies. Shake up a carton of eggbeaters, pour in enough to just about cover the sausage bits, about a cup. You're not trying to make a quiche here so think just enough egg that everything is eggy.
Microwave for 3 minutes.
Take your leftover rice out of the fridge, use chopsticks or a fork or whatnot to break it up. Empty that into the bowl, then mix thoroughly. Add whatever seasoning you want-- in my case, garlic, some paprika, and a tablespoon of oyster sauce. Mix that up as well.
Microwave for 6 minutes.
Stir well, and you're done! It tastes pretty decent, I think, and it may even be a bit healthier since you didn't use any oil to fry the rice.
