A couple recipes I figured I'd kick out there. I didn't write up the lasagna I made the other week since I count that as a reasonably well understood recipe by now.



These are stuffed bell peppers, made more or less by this recipe.

They were okay, but I think I need to be more lavish about the cheese topping, or to mix some cheese or flax seed into the filling. As it was, they were a bit too plain.



I made the mistake of buying 3 pounds of almond cookies or so from CostCo at one point, and still most of the carton left by the time the expiration date was coming up, so I took the cookies and crumbled them up in a food processor, then tossed the baggie of cookie crumbs into the freezer. But how was I going to use them up? Well, maybe I could make pie crusts... Or...

I used this recipe for cookie crumb cake instead! I made a few substitutions: water instead of milk, an extra cup of cookie crumbs since the batter was looking too liquid after that, and orange and lemon zest instead of vanilla. Turns out 'easy as cake' is fairly accurate, my substitutions had no ill effect on the recipe and they came out great. *nomnomnom*
