Cooking Experiment: Apple Pie

A very tiny one, admittedly, maybe six inches diameter. But you can admire it below the cut!

Crust is based on this whole wheat pie crust recipe I've used before. I put a dollop of applesauce and some cold water in, instead of the cold milk though. I used this to make three miniature pie crusts and the toppings thereof.
Filling is 3 granny smith apples, 2 honeycrisp apples, cut up into bits. I melted 1/4c of unsalted butter, stirred the apples in, added a teaspoon of cinnamon and about a tablespoon of honey and mixed to coat everything. Then took about 1/3c of sugar and 2/3c of applesauce and mixed that up and once the apples were cooked tender enough, I mixed that in and heated some more 'til bubbling.
I served this up with (not pictured) Haagen-Daazs vanilla chocolate-cip ice cream. Yum!
I think the apple pie tastes pretty authentic... Only problem is that it's hard to get a perfect slice out of these little containers, but I intended them more to be single-serving pies anyway, just eat right in them.
And best of all, I have two more of the little beauties waiting to be baked at a later date.
