Cooking: Mapo Tofu

This came out well last night so I thought I'd share. If you're not familiar with mapo tofu, it's basically a one-pot stir fry dish (not including the rice cooker) common to Chinese villages.
Normally made with ground pork, but I used ground turkey and ground flax seed - something I've been meaning to try, supposedly ground flax seed can be used as a substitute for fat in dishes. It seems to work!
1.25lb ground turkey
1 package firm tofu, diced into 1/4" cubes
8 oz. carrots, diced
1/2 onion, diced
1/2 green pepper, diced
1 Tbsp chili garlic paste
1 tsp powdered ginger
1 tsp white pepper
1 tsp soy sauce (low sodium)
1 tsp oyster sauce
1 tsp crushed red peppers
Dash of sugar (to taste)
1/2 can chicken broth (low sodium)
1/4 cup ground flax seed
This is a one pan adventure. Get a big frying pan, you are going to need it.
Be sure to start the rice cooking while you are making this! I'd estimate 4 cups of brown rice.
The attentive will notice that diced carrots, onions, and peppers have shown up in a lot of my recipes. I'm given to understand these form the basis of the French 'mirepoix' along with celery. They're aromatic vegetables, they add a lot of flavor to most dishes.
But anyway, start with sautee'ing the carrots on medium heat, they take the longest to cook to a suitable softness. Once you've got them cooked halfway, bring in the onion. Then the pepper. Add the chili garlic paste and powdered ginger at this point.
Now, clear a space in the middle for your turkey. Stick that in, sprinkle the oyster sauce and soy sauce on top. Let it brown on one side, then crumble it up and flip it over to do the other side.
Once that's done, add the diced tofu in. Then the chicken broth. Throw some crushed red pepper on top, and add the ground flax seeds and a splash of sugar. Mix thoroughly with the turkey and veggies.
Set to low heat, put a cover on it, and give it about 10 minutes or so. Taste-test at the end to see if it's suitably tasty.
Serve over rice. Yum!
