Cooking Leftovers: Pineapple Meatloaf

But it does happen that I have leftovers from a previous week that I want to do something with - and heating it up just doesn't excite. So, I had this turkey/grated carrots meatloaf. And I had this can of diced pineapples.

Pineapple sauce is easy: get a pot, take the water/juice from the can of pineapple, set it to boiling, mix a heaping tablespoon of cornstarch into a glass with just enough water to liquidify it, then pour that in. Add a bit of crushed red peppers for zing.
I then cubed the last two slices of meatloaf and put those in the sauce, then added most of the pineapple chunks and stirred. Serve on leftover brown rice heated up and you're good to go!
I made this with two slices of meatloaf, and it looks like it makes enough for two. Plus, leftover pineapple chunks that I will have to figure something out for later.
