Chicken Katsu with Plum Sauce

1.5 cups of panko crumbs turned out to be too much for the two chicken breasts I used, as well, so I took the zucchinis I was going to roast and made zucchini tempura as you can see...

It came out pretty well! I used a bit too much salt when downsizing this recipe-- oops, so the zucchini tempura tastes a bit too salty. I will have to give it some thought for the next time I try making katsu.
