Thanksgiving Meatloaf
Nov. 24th, 2011 07:00 pmI've made Chinese-style meatloaf with hoisin sauce, and meatloaf with honey smoke BBQ sauce, but for Thanksgiving, I decided to try and make a Thanksgiving style meatloaf.
I used this recipe: Making Turkey Meatloaf

However, instead of two pounds of turkey, I used about 1.25 pounds of ground turkey, 0.75 pound of grated carrots and 0.5 pounds of chopped celery. I also added some honey for sweetness, and in place of cranberry jelly for a topping, I tried to make a brown butter sauce-- didn't work that well, unfortunately, I'll use a more standard gravy next time. I must remember to drain off the turkey's juice from the partway mark and use that for the gravy.
I cooked the green beans in a wok, steaming them with chicken stock, ginger, and garlic and a pinch or three of salt. They came out very well!
I think the turkey meatloaf came out pretty well. I'm not sure if I'd recommend using honey; I like it but it may not fit your idea of a Thanksgiving meal.
For dessert, I have some apple pastries (ready made) to be baked in the oven! Since I'm eating and cooking at home, a whole apple pie would be too much.
