I haven't been eating applesauce in a while so I had part of a bottle that was nearing its expiration date. Nervously, I pondered ways to use it up... Ah. Well, I could make applesauce cake... That didn't seem enough by itself to carry the recipe though. Aha. Applesauce carrot cake! But wait, I'd never be able to eat a whole cake by myself.
CUPCAKES!
So I browsed through a few recipes, and here's what I came up with.

I used these ingredients, give or take:
Dry ingredients:
2 cups whole wheat flour
1 cup whole wheat pastry flour, or all-purpose flour will work fine
1.5 cups sugar, may use brown sugar for more flavor
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
Wet ingredients:
1 cup of olive oil
2 cups of applesauce
2 cups of grated carrots
0.5 cups of honey
Dash of orange zest
Dash of lemon zest
0.5 cup of chopped almonds
I set the oven to preheat at 350 degrees. I mixed the dry ingredients in a 2.5 quarts bowl, then mixed the wet ingredients in a separate bowl of similar size, then stirred the dry ingredients into the wet, a bit at a time.
Then I realized I didn't have any cupcake liners, so I rushed off to buy them-- these are Safeway's jumbo cupcake liners pictured above. They fit fine into the regular muffin tin above. I tried using a large serving spoon to spoon the mixture into the liners; they're meant to be filled to halfway, but the mixture likes to stick to the spoon, so I would just use a regular spoon in the future.
How do they taste? Well, not quite as sweet as they should be-- I added 0.5 cups of sugar to the recipe to correct that for the future. But they do taste pretty good, so I'm happy. ^_^
This is the first time I've made a cake-like recipe! Though I've made bread and pie crusts in the past. I'm freezing most of these, but I'll be taking some over to my mom's tomorrow for our weekly lunch.
