This is probably old hat to most chefs out there but I just discovered this... If you have a small frying pan and you're scrambling up some chicken-apple sausages, bell pepper strips, onion, and mixed veggies, you can get a decent sized plate, put that over the pan, flip the pan over so that the eggs land on the plate, then slide the eggs off onto the pan, now inverted.

It came out pretty good! I'd add a bit of salt next time but this solves my biggest problem with eggs, flipping them to ensure they're cooked thoroughly.
