I had a yen to cook salisbury steak this weekend. I decided to try and approximate one using ground turkey, based on some of the 'healthy salisbury steak' recipes out there...



This is basically the same sort of mix I use for meatloaf: ground turkey, grated zucchini, and bread crumbs. However, instead of barbecue sauce, I added a can of Campbell's French Onion soup. For gravy, I sautee'd some frozen chopped onions with chopped up bacon, then added chicken stock and thickened with corn starch. I browned the patties in the frying pan, then cooked them at 350 degrees for 30 minutes.

It tastes pretty decent! But I think I'll need to try making it with real beef next time, it just doesn't seem to quite hit the mark. Or perhaps add some flax seed to give it more fat content.

I'd recommend Amy's Mushroom Soup (usually in the "organic foods" section of the grocers instead of...anything Campbell's. It's thick and very umami and ought to give the the turkey more in the way of richness. I'd probably swap the bread crumbs out with flax since the protein in flax basically "cancels out" the carbs plus you get all the good omegas.

Same would work just fine with beef and, in fact, that's how I've made it. Split the tin of mushroom soup between the patties and the gravy though. Sooooo yummy.
