Since I started making quiches, I've theorized that they would be good in cupcake-size. I decided to try that today...



After having actually tried them though, I think it's kind of a waste of effort for breakfast, and they won't do well as party food, at least without a miniature crust of some kind to make them easier to hold. Easier to just lay the spinach and eggs out in a pie pan and bake them that way.

The rolls are just pre-made frozen rolls that I baked. Those are also something I wouldn't get again; they're a ltitle too dry.

Ah well, win some, lose some! Still edible, just not an amazing new discovery.

If you did a little surgery on the sausage pieces to make eyes, noses, and smiles or frowns, you might improve the chances of small kids (or large kids) eating the eggs and spinach.

Not all of us have kids, but even if never have kids of your own, you might at some point have visitors, or someone else who reads your blog might have kids.

Bacon cups sound delightful to me, since I can't do wheat or corn.

Oscar Mayer now has an "uncured" bacon with no nitrates or nitrites--it's MUCH better than the ones that have the chemicals. I'm hoping more brands will do this, as otherwise I'm not particularly fond of Oscar Mayer.

I just reheated half of the leftovers and nommed. With a dusting of Himalayan rock salt, they are quite tasty!
