Cooking: Mapo Tofu
Sep. 18th, 2010 12:41 pmThis came out well last night so I thought I'd share. If you're not familiar with mapo tofu, it's basically a one-pot stir fry dish (not including the rice cooker) common to Chinese villages.
Normally made with ground pork, but I used ground turkey and ground flax seed - something I've been meaning to try, supposedly ground flax seed can be used as a substitute for fat in dishes. It seems to work!
1.25lb ground turkey
1 package firm tofu, diced into 1/4" cubes
8 oz. carrots, diced
1/2 onion, diced
1/2 green pepper, diced
1 Tbsp chili garlic paste
1 tsp powdered ginger
1 tsp white pepper
1 tsp soy sauce (low sodium)
1 tsp oyster sauce
1 tsp crushed red peppers
Dash of sugar (to taste)
1/2 can chicken broth (low sodium)
1/4 cup ground flax seed
