A variation of Loco Moco...

tuftearsSome of you may have heard of Loco Moco, the Hawaiian comfort food. It features white rice, a hamburger on top, a fried egg or two on top of that, and brown gravy slathered liberally over the whole thing.
Inspired by a friend's recent endeavors in that direction, I decided to try creating the healthy version.
I took brown rice, put a salmonburger on top (steamed conveniently in the steamer attachment on top of the brown rice), some eggbeaters fried up on top of that, and then slathered some Panda Express orange sauce on the whole thing, plus I had some roasted asparagus on the side.
Worked out okay - but the salmonburger is too firm to make it really Loco Moco-ish. The egg and rice were the best part.
If I had it to do over, I think a turkey burger would work much better, and probably figure out some kind of salty gravy instead of orange sauce. Something to ponder for next time!
