I've been trying to avoid cheese and other fatty foods except in small quantities, so I've been convinced until now that I couldn't even think of making a casserole, but recently articles I've read suggest that a small amount is reasonably healthy. So, I ran a Google search for "healthy casserole recipes" and found one that looks promising.
Turkey Enchilada Casserole.
I followed the instructions mostly, but it looked a little light on veggies, so instead of one of the cans of black beans, I chopped up and sauteed a 16 oz. pack of carrots first, so that they'd be properly tender. Worked out great IMO!
It's a Mexican version of lasagna. So good I had seconds. };9

Date: 2010-09-06 05:14 am (UTC)I've always had a soft spot for enchiladas made like this, with the lasagna like layers of tortillas and filling. It's quick, easy comfort food just like mom used to make!
Only when I make it, it has rather a lot of cheese in it. Cheese, onions, and Poblano peppers are just about the only things I'll ever include. Well, beside the sauce and tortillas. :)
