Cooking Experiment: Steamed Eggs

It's been a bit since the last cooking experiment, hasn't it? Well, I didn't count the spinach dish from Thanksgiving, though that came out decently, since it was really pretty simple. (I peeled some carrots and did a honey-ginger glaze on them, then I cut up the carrot peels and mixed them into saute'd spinach along with almond slivers and saute'd that some more - came out pretty good, IMO)
So, this week's exercise was another 'get Mom to eat more veggies' one. And since I haven't had steamed eggs in a while - it's a Chinese home cooking kind of thing that you won't see in restaurants - I settled on this.
Steamed egg is by itself pretty straightforward. You just mix some minced meat and shallots or green onions into some eggs with some soy sauce, and some other seasoning. However, I wanted this version to be high in greens, so I opted for the following ratio:
0.5 lbs ground turkey - sautee'd with powdered ginger, garlic powder, soy sauce
1 lb spinach - sautee'd with garlic powder
About 2 eggs - I used eggbeaters - poured in and then stirred thoroughly
I got some water boiling in a large pot, then I put the bowl with this mixture into a steamer container which I then put in the large pot, then covered and cooked for a total of 30 minutes.
Note that you want to be careful about too much moisture. If you used water to sautee your spinach, pour this out, so you don't make the mixture too wet to gel, or else add some corn starch when you add the eggs, to make sure it cooks solidly.

This is what was left over after dinner - I didn't think to get a pic before. I added some soy sauce to the top to give it color and more salt, after I had finished steaming it. Admittedly it's not a really appetizing looking dish... Still, tasted pretty decent. Maybe some crushed red peppers would give it more zing.
Serve with rice. Makes enough for four.
