tuftears: Lynx in Chef's Hat (Cooking)

Okay, I haven't written much lately, so I figured I'd take a picture of my latest cooking. This one didn't turn out spectacularly, but it's edible!

Chicken on a plate with brown rice and peas!

Start with two chicken breasts. I marinaded them overnight in:

- rice vinegar, about 1 cup
- soy sauce, about 1/2 cup - this turned out to be too much
- lemongrass, rest of what was in squeezable tube, about 1 Tsp - use more!
- ground ginger, 1 tsp
- ground garlic, 1 tsp
- honey, 2 Tbsp

Then I heated a pan to medium with 1 Tbsp olive oil in it, and seared the chicken for about 90 secs on each side. Following this, I put the chicken breasts on a piece of aluminum foil into a toaster oven set for 450 degrees for 15 minutes.

I had leftover brown rice, and I threw some peas into the microwave to cook, resulting in the above dish.

I also tried making the marinade into gravy, but after I tasted it, I realized that it was too salty... and the chicken would probably taste best by itself, so I just sprinkled some toasted sesame seeds on top and called it a meal.

Notes for future or others seeking to replicate this recipe:

- Chicken came out a bit dry. I should either lower the temperature or cook it for less time.
- Use less soy sauce, use more of the other ingredients!
