Saturday: a crockpot chili...  With chicken thighs, carrots, onion, red bell pepper, kidney beans, chili powder, cumin seed... and cinnamon and honey!  It is sweet and spicy.

Guildies were horrified.   "Omg chicken?!   Wtf honey!?"  And one guild mate commented of my description 'an abomination before the eyes of the chili gods', "Hey, that'd be a great band name."

Sunday: breaded salmon burgers!  I have been craving chicken fried steak.  I figured the texture would be close enough ...  but there's no such thing as a healthy gravy so I used Panda Express orange sauce and served with brown rice and mixed veggies.  Not a CFS substitute but tasty enough.

Not so much but estimating it--

Start off with:

1 pound of carrots, diced
1 reasonable size red onion, diced
1 whole red bell pepper, diced
1-2 cans of diced tomatoes, squeeze the tomato juice out before adding
1-2 cans of kidney beans, washed
2 Tbsp or so chili powder
1 Tbsp cumin seeds
1 cup chicken stock

Set cooking for 6 hours in your crock pot. In the meantime, set up:

1 pound or so of chicken thighs

Remove the skins and sprinkle with no-salt poultry seasoning mix so they can marinade while the veggies are cooking.

Put this in after 2 hours. (or 3-4 depending on how shredded you want it)

At 1 hour left:

1 cup of peach-pineapple salsa
1 tsp or so crushed red pepper
1 Tbsp ground cinnamon
1-2 Tbsp honey, depending on how sweet you want it - or chocolate works
6 shakes of sea salt

Stir these in, extract the bones, stir the now-shreddable chicken meat into the chili, close the crockpot again.

I find this goes very well with unsalted tortilla chips. (Padrino's) For someone trying to avoid salt for blood pressure reasons, sweet and spicy works well. If you want it to be savory instead of sweet, instead of cinnamon and honey and peach-pineapple salsa, you'd use hot salsa and more salt, and probably a pound of ground turkey instead of chicken thighs, but chicken goes well with a sweet dish.

I try a little of everything, then I have to repeat the dishes, then I have to perfect them. Mostly, I find, what people need are ideas, and reviews of things other people have tried.

Yea, chili pepper and kidney beans are the distinguishing element for me! That and I'd put stuff like celery, bok choy, or other greens into stew.

Maybe Minor or Major listen to Chili God Abomination. <_<

IMO it's a better party chili dip - for someone who likes to waste way too much time preparing for party - than a standalone meal. I probably need more kidney beans, or perhaps rice, to make it more filling.
