Cooking Experiment: Applesauce Bread

One hazard of buying mixed flavors of yogurt is that you may get a flavor you don't like as much. In my case, the mixed yogurt has strawberry, peach, and vanilla flavors, and I'm not that fond of vanilla. So what was I to do with the vanilla yogurt?
I looked at the ingredients I had lying around and decided to try... Applesauce yogurt bread!
It didn't actually work out that well.
Here's the basic recipe. I did a few substitutions, such as using vanilla yogurt in place of most of the wet ingredients...
But what murdered it for me was not enough flour and baking powder in proportion to the wet ingredients. For future reference, with a baking powder bread of this kind, the batter shouldn't be liquid, and I probably need to use a food processor to aerate the mix.
The first attempt turned out more like congealed oatmeal than bread... That wasn't optimal.

This is the second batch! I mixed up another cup of flour, applesauce, baking powder, and spices, and then took what was left of the first loaf and chopped it up, then mixed that into the dough as well.
This is still a little too moist and heavy in the center, but I think it's much improved in 'breadiness'. It's unfortunately also a bit dry. I guess it's something I need to keep experimenting and practicing!
